Hey all,
Just a quick update on the Peach/Strawberry. I went ahead and added the peaches and the strawberries today!
Process:
In a big pot (2 gal.) put the frozen peaches submerged in water. Bring the peaches to almost a boil but don't boil them.
While the peaches are heating up put the strawberries in a smaller pot and put them on a low heat setting to melt the strawberries.
When the peaches are hot take them out of the pot and place them in a bowl full of cold water. Then gently peel back the side and discard. After that hold the peach over the strawberry pan and pit the peach putting the pulp into the pot and discarding the pit.
After all the fruit is combined bring the fruit to a near boil, slowly so that you don't caramelize the ingredients. Use a potato smasher to smash up and combine the fruits into an almost heterogeneous mixture.
Pour the mixture through a stainer a couple of times to try to get out as much of the pulp as you can.
Finally add this to the mead and gently swirl it to mix it up.
Now we wait for the mead to fully clear and then it's DRINKIN' TIME!
I'll keep you posted!
