7th in the Brew

Well, it's that time again. I am starting to run a little low on mead so I decided to go ahead and start another batch. Hopefully this batch will be ready around the time that the 5th and 6th brews are gone. Even more hopefully is that the 5th and 6th will still be around so I can have a smattering of mead one day.

Anyway here are the ingredients:

10 pounds of clover honey
2 gallons of cranberry raspberry juice (100% juice no pectin).
3 tsp. bread yeast

Process: (Again I have standardized on the lees stirrer/degasser as my honey disolving method please see my earliest posts for other methods)

Put 64oz of the cran/rasp juice into the carboy. Put 2 pounds of honey in. Use the lees stirrer to dissolve the honey. You probably won't be able to get the last of the honey out of the container. Here is a hint. Add in about 56oz of cran/rasp juice and add the remaining 8oz of juice to the used honey container. Now shake. This will dissolve the remaining honey while also aerating the must a bit. Add the remaining honey and the juice to the carboy. Next, add in 4 more pounds of honey (using juice to get remaining honey from the container). Use the lees stirrer again for 5 minutes to dissolve the honey again. Lastly, add in the last 4 pounds of honey and use the juice to get all of it. Add in the remaining juice and use the lees stirrer to dissolve the honey for 7 minutes. Finally pitch the yeast.
