Long time no update! Well I'm here to tell you that the mead is done!
I didn't keep tabs on the exact time table for this one but I noticed that this one was done (complete and cleared) by 3/27/2009. That puts this mead at 1 month and 11 days start to finish. One of my quickest meads yet.
As I noted below I did create this one to be "dry" so I could carbonate it naturally. Well.....Turns out the FG (Final Gravity) of the mead is .990. This means a few things:
The mead is 12% ABV and has fermented to the tolerance of the yeast. Given the yeast have hit their ABV tolerance I can't carbonate.
So....What shall I do? Well I'll tell you what I *did* do. I tasted this one and who boy! It is yummy! Not so much fruit flavor as I'd like (Strawberry is gone and Grape is a really weak after taste). However the mead is still quite good. Almost like a nice white wine.
I think I'll hang on to this one. Maybe next time add a bit more fruit or replace the water with fruit juice.
