Hey all started a new brew today as the blueberry is almost done!
Here is the recipe:
3 lbs Raw wild honey filtered
1 tsp yeast
1.5 lbs peaches (pitted and chopped)
1 lb strawberries (frozen and diced)
Process:
Bring 2 quarts water to 140 degrees F.
SLOWLY stir in honey and constantly stir.
Bring must to 145 degrees F while constantly stirring as to not burn the honey. Keep the must at this temperature for 8 minutes to pasteurize the must.
Wait for must to cool down to 80 degrees. I used an ice bath to do this.
Put must into carboy, and shake like crazy for five minutes.
Fill water to make 1 gallon.
O.G. = 1.1
Wondering about the strawberries and peaches? Me too! Just kidding, those fruits have a delicate flavor and therefore would be better used in secondary fermentation! I'll keep you posted!
