4th In the Brew - Pumpkin

Hey all!

The wife and I carved our pumpkin today and I decided to go ahead and make a pumpkin mead.

Ingredients:

1 lb Raw Wild Flower Honey
2 lbs Orange Blossom Honey
1 Cup Grade A Maple Syrup
1 tsp - Ground Cinnamon
- Nutmeg
- Pumpkin Spice
- Yeast
1/2 Tbs Lemon Juice
~5 lbs Pumpkin

Process:

Boil pumpkin in water to soften. While boiling the pumpkin pour honey, syrup, lemon juice, and spices in to carboy. Fill to about half way with warm tap water. Shake like crazy until fully all of the honey and syrup are mixed. Let it settle from time to time to see if stratification occurs. If layering of the ingredients occurs shake some more. Once pumpkin is soft strain and use a potato masher to mash up the pumpkin. Run cool tap water over the pumpkin while still in the strainer to cool. Drain water and run cool water over again. Do this process until the pumpkin is cool to the touch. Drain water completely and add to carboy. Finally pitch yeast and shake again until yeast is throughout mixture.
